STELLAR (SULFITE-FREE) CABERNET SAUVIGNON
Deep dark red fresh colour (no SO2 added so color stays intense). This un-wooded wine has a nose of a dark
berry fruit Pavlova, which develops into stewed prunes.
On tasting the wine a sweet entry is noted. This comes from the residual sugar, which gives a soft mouth feel
for such a young wine. The lack of SO2 also allows the influence of the malo-lactic fermentation to be quite noticeable. This
will become more integrated as the wine ages.
The same is true of the tannins. They offer protection from oxidation in lieu of SO2 and appear a bit robust
at the moment. These should soften over the next year.
STELLAR (SULFITE-FREE) MERLOT
This wine has a wonderful rich, deep dark colour; a characteristic of red wine made with no added sulphur
dioxide. The wine is unwooded and this allows the typical ripe Merlot nose to show itself with hints of fennel and liquorice.
Although the taste is full and rich, the wine has no green edges and ripe tannins carry the wine to a long juicy finish.
STELLAR (SULFITE-FREE) SHIRAZ
This Shiraz the dark, deep colour common to all our SO2 -free reds. Ripe picking combined with pre-and post
ferment macerations have given depth of color and taste without harsh tannins. This wine has a savoury character, the taste
hinting at salty fudge. No wood influence here. A slightly drier taste makes this a great food wine.
STELLAR (SULFITE-FREE) CHENIN BLANC
Nose of honey, marzipan and dry hay. Taste of citrus wine gums and smoky honey. Nice rich mouth feel. 2006
was a good year for white wine. The windier growing season and cooler than usual nights enabled the grapes to ripen without
losing their delicate flavors or acids. With the grapes harvested at their best, this Chining blanc was fermented cool and
bottled young. This wine's youthfulness and reasonable alcohol level leave the palate cleansed and refreshed.
